There are many and varied stories behind the use of the sash ranging from allowing you to wrap the sash around your wrist so you don’t drop your sword, to distracting the opponent with the noise of it whipping through the air, to helping balance the weapon, to distract your opponent, to an insignia indicating your rank on the battleground.
There is no question that the sashes do provide a distraction both in terms of noise and movement when added to broadswords, chain whips, daggers and hooks. However, there is no firm evidence that they were in use in early combat. That said, they do add drama to your performance, help you focus on accurate use of your weapon, and are compulsory for many competition routines.
In competition, the number of sashes depends on the style and the weapon you are using. So make sure you check the regulations carefully and start your training with the sashes... they definitely alter your technique.
